Before leaving for a summer vacation I would like to share with you a really refreshing summer recipe: frozen watermelon-strawberry daiquiri. Without any doubts, watermelons and strawberries are one of the best seasonal summer treats. Nothing is so refreshing on a hot summer day as a cold watermelon straight from a fridge and nothing is so sweet and delicious as summer strawberries! And in this cocktail these two are making a wonderful, sweet and refreshing combo.
It's totally up to you to make this drink boozy or not, the rum can be easily omitted. It will be delicious both ways!
3 cups frozen watermelon chunks
1 cup sliced fresh strawberries
150 ml rum (can be omitted or reduced to taste)
Juice of 1 lime
100 ml mint infused syrup
For mint infused simple syrup:
1 cup water
1 cup sugar
1 cup packed fresh mint leaves + mint stems
1. For mint infused simple syrup: bring water with sugar to boil in a small saucepan, stirring until sugar is dissolved. Reduce heat to low and add mint, simmer 2-3 additional minutes. Remove from heat, let the syrup cool completely. Stain out the mint. You can keep the syrup for about 2 weeks in an airtight container in the refrigerator.
2. Combine all ingredients in a blender, process until smooth. If you like your cocktails thick and slushy like I do (look at the texture on the pictures), you can put the mixture to a container or a zip-lock freezer bag and freeze it for about 2-4 hours. In this case it will almost get the consistency of a granita. If you prefer your cocktail less slushy, you can serve it straight away.
Garnish with watermelon wedges and enjoy!
